Spicy Cajun green pea soup with crab meat and smoked paprika

St. Lucian crab backs with sorrel chutney and cucumber "Souskai"

Goat cheese baked with mountain honey, cashews, brioche, sauce vierge

Pan roasted king fish, purple potatoes, artichoke vanilla foam veloute

Honey jerked local pork belly, sweet potato, daikon ravioli, red beet foam

Pan fried king prawns, infused with Pernod, caramelised fennel and tagliatelle

To Conclude


Coconut and nutmeg crème brulee, tropical compote and coco dust

Pancake parcel with cashew and hazelnut, candied fruit and coffee liqueur

A la minute apple tart with almond frangipani and vanilla ice cream
